Scallops and avocado


4 scallops

1 avocado

1 tea spoon of ginger

1 spoon of sugar

2 borettane onion

start whit the avocado, to do scratch or blender, as a need, very creamy and smooth, add salt and lime zets. keep for later

take a small pan and estar whit the spoon of sugar and same of water, let to melt and caramelised. add the tea spoon of ginger small dice, or  jus of the ginger, let to reduced, add borettane onion let to cook

take a pan, start to cook the escallops, use a oven paper to cook, try do not cook metal direct. these for don’t give be aggressive whit the scallops, cook to caramelised both sides. medium heat,
